Production at the plants:

  • Boil down to obtain a sugar content of 55% and 7-8% of water.

Better that the chips do not touch the bottom of the pan, otherwise the syrup will turn out with a bitter aftertaste.

  1. Rub the rhizome on the grater, put in an aluminum pan. (But some people prefer to cook the syrup in a pressure cooker, considering that in this way the quality of the products will be higher).
  2. 10 kg. Chips 1-2 liters of boiling water.
  3. Cook for one hour on moderate heat, stirring continuously.

  9. For long-term storage (from 8-9 weeks) put the syrup in a cool place, preferably in the cellar. Or you can pasteurize the syrup at a temperature of about 90 ° C.
