Red mushroom orange-cap boletus

Aspen is ranked second in taste after the white fungus.

Description and photo

Heads of a mushroom of brown, yellow-brown or red shades. It is because of this that it is also called the red-headed mushroom.

The tubular layer is usually greyish or olive.

Aspen red has the following description:

  • leg height - about 15 cm;
  • leg width - from 1.5 cm to 5 cm in a mature mushroom;
  • cap diameter - from 4 to 15 cm (rarely reaches 30 cm).
The cap is smooth, the young fruit has edges bent to the leg, and the mature one looks pincushion-shaped. Easily separated from the thick and stocky legs.
Important! The leg of an aspen is rather hard consistency, so it is recommended to remove it.

Where and when to look for them

Places where aspen growers, enough. Contrary to the name, it can enter into a symbiosis not only with aspen, but also with many other deciduous trees (for example, birch, hornbeam, oak, poplar, beech, rarely willow), but it is useless to look for it under conifers.

The season for the red aspen is the period from June to October.

Important! The longest and abundant fruiting begins in September.
Aspen is considered quite common - it grows in the forests of Eurasia, the Caucasus, Siberia, the Urals and North America.

Are there false?

Did you know? Redhead is almost unique: it is not like anyone, and therefore it is difficult to confuse with another mushroom.
For an experienced mushroom picker there is no difficulty in distinguishing a real mushroom from a false one, and beginners are often not very successful. False boletus can be considered gorchak (gall mushroom)which does not contain poisons. But eating it is completely impossible. Gorchak grows next to coniferous trees. It is worth paying attention to A few differences from the bitter asporus bitter:

  • the flesh changes color from white to pink;
  • the pattern of the net layer is characteristic of the gall fungus;
  • the tubular layer is pinkish.
By remembering these signs, you can determine if you really found the redhead.

Mushroom cultivation

If you like redheads very much, but you don’t often get out into the woods or do not have the opportunity to buy them, then you shouldn’t get upset. Aspen mushrooms can be grown at their summer cottage or even at home.

Composting

Compost for mushrooms is best prepared from leaves, sawdust and humus. The best option would be to take it all or just one thing under the aspen tree - such a nutrient mixture will have a very beneficial effect on the future harvest. All components must be processed prior to installation in order to avoid the multiplication of harmful bacteria or the appearance of other fungi.

Planting mushrooms

Dig a hole about 2 x 2 meters and a depth of about 30 cm.

The first layer - the leaves (best of all, if it will be aspen leaves). Thickness 10 cm.

The second layer is forest humus. Thickness 10 cm. It is recommended to take humus next to the trees with which the redhead forms mycorrhiza. The third layer is grain mycelium. When acquiring mycelium, you need to make sure that it does not overheat.

The fourth layer is the same as the first. It is important to ensure that the first and fourth layers are the same in composition. From above, all this must be covered with earth, with the expectation that the thickness of the cover should be no more than 10 cm.

Then you need to water the resulting bed with a nutrient solution (for example, from sugar).

Important! Planted mycelium should be no earlier than May.
You can also dig holes near the trees and fill them with crushed aspen mushrooms, mixed with flour and gelatin. If the weather is dry, then the mycelium should be watered periodically.

Care

The first harvest will appear in three months. Periodically should be fed mycelium nutrient solution of sugar - 10 g per 10 liters of water. In the summer it is important to ensure that the bed is not dry - the soil should be slightly damp. In winter, the mycelium is covered with leaves or straw, which must be removed in the spring.

What to cook from the redhead

Red Head is a delicious mushroom and amenable to any kind of processing.

Important! When processing, the orange-cap boletus darkens, and in pickled form it preserves its natural appearance.
Red boletus can be dried, marinated, fried or cooked (it is recommended to cook for about 20-30 minutes). They make soups, fry or bake with onions or potatoes. An excellent addition to the festive table will be fried redheads, stewed in sour cream and decorated with greens.

Redheads can be preserved or cooked on the grill. The cabbage soup with such mushrooms has an interesting taste. Below we offer you some very simple and tasty recipes.

  • Fried aspen mushrooms
When cooking, aspen mushrooms give all their unique aroma and part of the taste of decoction. But the fried aspen mushrooms almost fully retain their taste. In order to cook fried mushrooms, we need:
  • 500 g of redheads;
  • 2 tbsp. l vegetable and butter oils;
  • medium sized onion;
  • 3 tbsp. l good sour cream;
  • salt, pepper, herbs to taste.
Chop the onion smaller. Put the pan on the fire, pour the vegetable oil, heat it and then add the butter. Fry the onion for about five minutes - you need to bring it to transparency.

Next, carefully wash the mushrooms. Feet should be cleaned. Slice the aspen mushrooms and add to the onions. Stir in the pan for a couple of minutes and leave to stew under the lid until all the extracted juice is evaporated.

Next, fry the mushrooms and stir them. You need to fry until golden brown - it will take about 10 minutes. Add spices and sour cream, mix. Again, cover the pan with a lid and let the mushrooms sweat on the smallest fire for 5 minutes.

You can serve such mushrooms with any side dish - they will be a very tasty addition to any table.

  • Fried Potatoes with Redheads
Who doesn't love fried potatoes? Even better, this dish becomes in tandem with the orange-cap boletus.

For the preparation we need:

  • 200-300 g of redheads;
  • vegetable or butter;
  • medium sized onion (optional);
  • 6 large potatoes;
  • spices to taste.

Well, wash the mushrooms and cut them. Peel and cut the potatoes (best cut into cubes), cut the onion. We put the pan on the fire, add 1 tbsp. l vegetable oil (it can be replaced with cream) we heat it up and fry the aspen mushrooms on high heat. The liquid that is released from the mushrooms should be slightly evaporated. Add the onions to the mushrooms and continue frying for about 5 minutes. Next, add the potatoes and continue to fry until cooked (about 20 minutes).

Important! Stir the potatoes carefully, so as not to break them, then the dish will turn out not only very tasty, but also very beautiful.
If necessary, in the process of cooking add oil. At the very end add spices and herbs to taste. Having tasted this dish once, you will love it.
